Scones with raisins

Scones are classic English "biscuits", offered with afternoon tea and accompanied by a delicious cream, clotted cream & jam.

Their recipe is very easy, and the result is ... a trip to London! This recipe is originally by Jamie Oliver, and I did some very small changes!

For 18 scones you will need:

  • 150 g raisins (or other dried fruits of your choice)
  • 150 g butter
  • 500 g self raising flour
  • 2 tbsp. baking powder
  • 2 tbsp. sugar
  • 2 large eggs
  • 4 tbsp. almond drink or milk

 

  1. Preheat the oven at 200 C
  2. In a bowl, mix the flour, baking powder, sugar and butter and mix with your hands until the mixture turns into small pieces.
  3. Make a well in the middle of the bowl and add the eggs & milk and mix until the dough is formed.
  4. Then add the raisins. It is important not to knead the dough too much!!!
  5. Leave the dough in the fridge for 15 minutes.
  6. Using a rolling pin, and roll out the dough to a height of 2-3 cm.
  7. Make round biscuits-scones with a cup, and place on non-stick paper upside down (so that the dough is straight on top).
  8. Brush the scones with milk
  9. Bake for 15 minutes
  10. Enjoy!
