Φακές με αγκινάρες
Τώρα που έχουμε αγκινάρες γιατί να μην τις συνοδεύσουμε με τις αγαπημένες μας φακές; Το χορταστικό αυτό πιάτο είναι πλούσιο σε φυτικές ίνες, πρεβιοτικά*, και πρωτεΐνη!
Τι θα χρειαστείτε για 6 μερίδες :
- 1 1/2 φλ. νερό
- 2 μέτρια κρεμμύδια κομμένα σε κύβους
- 2-3 σκελίδες σκόρδου
- 2 κ.γ. κύμινο
- 1 κ.γ. κόλιανδρο σε σκόνη
- 1 φλιτζ. φακές μουλιασμένες και στραγγισμένες
- 1 φύλλο δάφνης
- 2 κ.σ. χυμό λεμονιού
- 500 γρ ντομάτες
- 1 1/2 φλ. αγκινάρες
- 1/4 κ.γ. μπούκοβο
- Αλάτι και πιπέρι
- 12 κ.γ. ελαιόλαδο
Εκτέλεση:
- Σωτάρετε τα κρεμμύδια με λίγο νερό σε μια κατσαρόλα μέχρι να μαλακώσουν (για 7 λεπτά)
- Προσθέστε το κύμινο, το σκόρδο, και τον κόλιανδρο και μαγειρέψτε για 2 λεπτά.
- Προσθέστε το νερό, τις φακές, τη δάφνη, το χυμό λεμόνι, τη ντομάτα, τις αγκινάρες, και το μπούκοβο και αφήστε τα να βράσουν.
- Χαμηλώστε τη φωτιά και μαγειρέψτε τα για 30 λεπτά μέχρι να μαλακώσουν οι φακές. Εαν χρειαστεί προσθέστε νερό.
- Αφαιρέστε το φύλλο δάφνης και σερβίρετε σκέτο ή πάνω σε ρύζι.

Effects of curcumin consumption on human chronic diseases: a narrative review of the most recent clinical data
Δημοσιεύτηκε το 2ο επιστημονικό άρθρο μου, μια ανασκόπιση με των πρόσφατων κλινικών δεδομένων για τη συμπληρωματική χορήγηση κουρκουμίνης σε χρόνιες νόσους.
Η κουρκουμίνη (diferuloylmethane), είναι συσατικό του κουρκουμά (turmeric, Curcuma longa), του οποίου η αντιβακτηριακή δράση παρατηρήθηκε το 1949. Από τότε μελέτες έχουν αναδείξει ότι αυτή η πολυφαινόλη έχει αντιφλεγμονώδη, αντικαρκινική, υπογλυκαιμική, αντιοξειδωτική και αντιική δράση, γεγονός που υποδεικνύει ότι μπορεί να έχει θετική επίδραση σε χρόνιες νόσους, μέσω επίδρρασής της στην παραγωγή ελευθέρων ριζών, στο οξειδωτικό στρες, και στη φλεγμονή, μεταξύ άλλων. Τις τελευταίες δεκαετίες έχουν γίνει αρκετές μελέτες για τη χρήση της κουρκουμίνης σε ανθρώπους, ενώ οι πωλήσεις σκευασμάτων κουρκουμίνης έχουν αυξητική τάση.
Abstract
Numerous clinical trials have investigated the potential beneficial effects of curcumin supplementation against several human chronic diseases. Up to now, it has been claimed that curcumin consumption may exert beneficial effects against several chronic diseases by promoting human health and preventing diseases. In this aspect, the present review aims to critically collect and in-depth summarize the most recent, well-designed clinical studies evaluating the potential beneficial effects of curcumin consumption on human health promotion and disease prevention. According to recent and well-designed clinical studies, curcumin consumption may benefit against obesity, metabolic syndrome, and diabetes. Moreover, curcumin consumption seems to exert a positive effect on people suffering from various types of cancer, fatty liver disease, depression, arthritis, skin diseases, gut inflammation, and symptoms of premenstrual syndrome. Due to the strong heterogeneity among the clinical studies concerning the exact effective curcumin dose and formulation, as well as the recommended treatment duration for each chronic disease, no precise and definitive conclusions could be drawn. Further large-scale prospective studies are strongly recommended, being well-designed as far as follow-up times, dosage, formulation, and duration of curcumin supplementation are concerned. Moreover, potential confounders in each specific chronic disease should carefully be taken into account in future studies.

Abstract
Background: Multiple sclerosis (MS) constitutes a chronic progressive demyelinating disease which negatively affects the central nervous system. MS symptoms detrimentally affect the quality of life, as well as the life expectancy of MS patients. In this aspect, the present study aims to critically summarize and evaluate the currently available clinical studies focusing on the potential beneficial effects of dietary supplements on controlling MS symptomatology and relapse. Methods: PubMed database was comprehensively searched, using relative keywords to identify clinical trials that investigated the beneficial effects of dietary supplementation against MS symptomatology and progression. 40 clinical trials were found, which were divided into categories. Results: Nutritional status of MS patients, as well as supplementation have been suggested as potential factors affecting progression. Several substantial studies have documented a systematically high prevalence of vitamin A, B12 and D3 deficiency amongst MS patients. At present, clinical data have suggested that most of the dietary supplements under study may exert antioxidant and anti-inflammatory properties, improving depression symptomatology and quality of life overall. However, malnutrition risk in MS patients has not been adequately explored in order for more precise conclusions to be drawn. The supplements that may have a positive effect on MS are vitamins, fatty acids, antioxidants, phytochemicals and melatonin. Conclusions: Several dietary supplements may decrease inflammation and fatigue, also increasing also autoimmunity tolerance in MS patients, and thus improving quality of life and life expectancy. Currently, there is no effective clinical indication for applying dietary supplementation as complementary treatment against MS symptomatology.

2. Ρύζι και σακχαρώδης διαβήτης γίνεται; Πολλές φορές ακούμε ότι το ρύζι απαγορεύεται στους διαβητικούς. Κάτι τέτοιο δεν ισχύει. Όμως, όπως όλες οι πηγές αμύλου είναι καλό να καταναλώνεται με μέτρο.

3.Αγοράζετε συχνά έτοιμες κομμένες σαλάτες; Υπάρχει κίνδυνος μόλυνδής τους με σαλμονέλλα, ενώ λόγω δημιουργίας βιοφίλμ είναι δύσκολο να ξεπλυθούν καλά!
